Salad Turnip & Radish Slaw with Apple Cider Dressing

Salad turnips are sweet, mild, and perfect raw. This slaw comes together in minutes and keeps well in the fridge.

Serves 4

Ingredients

  • 3–4 salad turnips from your veg box, trimmed and thinly sliced
  • 4–5 radishes from your veg box, thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper
  • Fresh dill or parsley to finish

Method

  1. Combine the turnips and radishes in a bowl.
  2. In a small jar, shake together the vinegar, olive oil, honey, and mustard. Season with salt and pepper.
  3. Pour over the vegetables and toss well. Let sit for 10–15 minutes before serving.
  4. Finish with fresh herbs and serve.

Tip: Add toasted sunflower seeds or crumbled goat cheese to make it more of a meal.
