Sugar Snap Pea and Radish Salad with Sesame

Crisp, quick, and holds its crunch for hours, this one’s your safety net if you’re short on time. The peppery bite from the French breakfast radishes balances the sweetness of the peas and honey.

Ingredients (serves 4)

  • 2 cups sugar snap peas, trimmed and halved on a bias
  • 6 French breakfast radishes, thinly sliced
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tsp honey
  • 1 tbsp sesame seeds, toasted
  • 1/4 tsp salt

Method

  1. Whisk the sesame oil, rice vinegar, honey, and salt together in a large bowl.
  2. Add the snap peas and radishes to the bowl and toss to coat.
  3. Sprinkle with sesame seeds just before serving.

Tip: Fastest side on the table. Prep it before guests arrive and it’ll still be crisp hours later.
